public speaking and meeting the future inlaws. And, you
know, there's really no reason to quake in your tennis shoes
when it comes to pairing wine. Especially now. Right

for wine.
Of course, like we always maintain, your tastes are uniquely
yours. And frankly, if any combination of food and wine
tastes great to you, stick with it! That means that
you shouldn't be afraid to experiment, too.
About conventional wisdom: when it comes to wine and
food, toss the red with meat, white with fish thing out the
kitchen window! Again, what's right for you?

Complement
or Contrast? We
talk about complementing or contrasting. It works for both
reds and whites.
Choosing wine to complement your food is putting the similarities
to work. Heavier food, fuller wine; light dishes, lighter
wines; thick and chewy foods, hearty wine. The goal
is to balance the tastes and textures.
To
contrast do just that: contrast. Spicier foods, sweeter or
fruitier wine. Robust meats, more tannic, leaner wine to cut
through. Salty morsels, crispy and acidic wine.
But here's our favorite tip: think country. Regional foods
and wine share soils, culture and traditions so keep 'em together...like
Italian Chianti with spaghetti; meatloaf and American Merlot;
poached salmon and French Burgundy.
